The Best Keto Coleslaw You’ll Ever Taste
You arguably can’t enjoy a barbecue or a luncheon with friends if you don’t have great coleslaw.
It’s a staple side dish for chicken, burger patties, and more.
But like so many other tasty dishes, the keto diet places a bunch of restrictions on whether you can enjoy this favored food.
However, with this easy keto coleslaw recipe, you’ll be able to have the BBQ you’ve always wanted without giving up your keto diet. And that's especially true if you're making some delicious meat with my famous keto friendly bbq sauce recipe.
Let’s dive into this low carb keto coleslaw recipe!
Step 1: Peeling and Prep
First off, use a hand peeler to peel any skin off of the regular-sized carrot you’ll use for this recipe.
Alternatively, if you pick up a handful of baby carrots, you may not need to peel the skin off and can just wash them under the faucet.
Either way, cut the ends off of your carrot(s).
Use a grater as you would with cheese to grate the carrots into narrow slices.
Pro tip: the larger teardrop-shaped end of your grater is best for this purpose. After the carrots are prepped, transfer the shredded carrot slices or strips to a large bowl and place them aside.
Now it’s cabbage time.
Cut the stem of your cabbage off, then cut the cabbage in half.
Check the interior of the cabbage and remove any of the inner stem that remains, as it’ll mess with the flavor and texture.
Slice the remaining cabbage multiple times lengthwise so you end up with plenty of long strips just like you have with your carrots.
Also, you can also slice the cabbage a few times width-wise to make some smaller pieces too.
Now, after thoroughly shredding the cabbage, place it in the bowl with the carrot strips.
Step 2: Making The Keto Coleslaw Dressing
A good low-carb coleslaw for keto still needs a tasty dressing.
Add the dressing ingredients, including mayonnaise, vinegar, Swerve, celery salt, almond milk, and crushed black pepper into the same main bowl. Don’t worry about throwing in one ingredient time as you’re about to mix everything together anyway.
When it comes to the vinegar, be careful not to add too much at once.
I recommend 1 tablespoon, but feel free to go even lower if you don't like a tangy coleslaw as I do.
You can always add more to your coleslaw dressing later on if it's not tangy enough for you when you're finished making it.
Anyways, now you can take a few salad tossing utensils or spoons and toss the salad until the dressing is spread out evenly throughout the mixture.
Good coleslaw should look creamy and uniform in texture, so it might take a few minutes to get things just right.
Storing The Low Carb Coleslaw
Like with any coleslaw, you’ll need to keep this keto coleslaw stored in a cold environment if you want it to last.
We’d recommend placing it in an airtight Tupperware or glass container in your refrigerator, where it’ll last for three-four days before starting to turn.
This should be enough time to consume any regular portion of this recipe, and the prep time isn’t too bad so you can always make more when you run out.
This keto coleslaw is better than the normal thing over the long term because it doesn’t have any sugar, either.
This keeps its flavor really consistent over the days after you prep it.
Other Helpful Tips
When its time to shred the coleslaw ingredients, you can also use a food processor to help you shred them.
This is obviously a lot faster than shredding all the ingredients together by hand, even if you have a great pair of utensils just for the occasion.
Using a food processor is also a great idea if you need to make a huge amount of this coleslaw for a big party or backyard celebration.
You'll be able to prepare several servings in 15 to 20 minutes if you use the food processor, and you can even dress it in there if you'd like too.
Just like with regular coleslaw, you need to store this keto coleslaw within two hours of preparing if you don’t want to develop a strange odor or flavor.
It can only really be left at room temperature (defined as between 68°F to 72°F) for 90 minutes before you’re in the danger zone.
On the flip side, properly store coleslaw will last for between 3 to 5 days when refrigerated.
Consider Adding Some Broccoli Slaw To Your Coleslaw
You can also use a broccoli slaw like this one to increase the volume of your keto coleslaw, or in lieu of traditional cabbage entirely.
In a nutshell, broccoli slaw uses shredded raw broccoli stalks, carrots, and red cabbage.
Usually, you'll find these broccoli slaw packages in the "prepared foods" section of your grocery store.
That said, just double-check and make sure the carb count is the about the same as it would be if you used "standard" ingredients. You want to look for one in the 2-3 net carb range.
It’s also a good idea to pick up a broccoli slaw that doesn’t double down on ingredients you’ll already be adding unless you want to forgo the ingredients yourself. For instance, you could ignore the carrot preparation mentioned above if a broccoli slaw you’ll add already has sliced carrots for the mix.
At the end of the day, it’s up to you if you want to use these prepared broccoli slaw packages.
They do change the flavor of your keto coleslaw slightly. But I think in a good way.
And, if you don't like the taste of cabbage, broccoli slaw can be a great way to avoid using it, while still making coleslaw!
Having said that, some folks - like me - even like to add the broccoli slaw and keep cabbage for a new tasting experience.

Since it literally takes 5 minutes to make, this keto coleslaw recipe is my go-to for so many occasions, whether I’m at home or not. The sugar-free coleslaw dressing makes it hard to beat. A quick side to accompany a weeknight dinner? Definitely. A way to sneak in veggies that the kids will eat? Yep. A crowd pleasing addition to a get-together? Keto slaw will do it. A work week staple to prep over the weekend? Totally. A perfect solution when you’ve spent all day dealing with a house project and suddenly realize you have nothing to serve with your chicken for dinner? Yeah, that’s how this super simple, paleo low carb coleslaw recipe came about.
After a day-long fiasco of attempting to paint closet doors followed by a panic about unexpected fumes in the house in the middle of frigid January (smart, right?), dinner consisted of chicken from the freezer and this creamy keto coleslaw. At least it’s a funny story to look back on. 😉
Keto coleslaw dressing does develop its flavors after some time, and tastes best if you make it in advance – or at least let it chill for an hour – so a little planning ahead is smart. And fortunately, this sugar-free coleslaw keeps very well – even for multiple days – so it’s a great option to make ahead or even meal prep. And, it needs just 5 ingredients and is ready in 5 minutes, so it works for any type of meal.

What Is Coleslaw?
Traditional coleslaw is a simple shredded cabbage salad with a sweet dressing, which can be either mayo-based (more common) or sometimes a vinaigrette.
Is Coleslaw Keto Friendly?
Since coleslaw recipes almost always use a sweet dressing with added sugar, they are not keto friendly. However, this sugar free coleslaw recipe is keto-friendly!
How To Sweeten Keto Slaw?
Making keto slaw is similar to regular coleslaw – you just need a sugar-free sweetener for the keto coleslaw dressing. It’s important to use a powdered sweetener for the sugar-free coleslaw dressing, so that it’s smooth, because a granulated one can be gritty.
I used Besti powdered erythritol, but powdered allulose also works great.
How To Make Keto Coleslaw
This paleo coleslaw comes together in just 5 minutes! It’s one of the reasons I love keto recipes using coleslaw mix – it makes getting veggies in so easy.
- Make low carb keto coleslaw dressing. In a small bowl, whisk together mayonnaise, apple cider vinegar, powdered erythritol, and celery seeds. Season with salt and pepper to taste.
TIP: Apple cider vinegar makes this a paleo coleslaw recipe. If that doesn’t matter to you, white vinegar works just fine for keto as well. Paleo-friendly sweeteners such as honey or coconut sugar work fine, but would not be low carb.
- Combine sugar-free coleslaw. Place shredded cabbage in a large bowl and toss with sugar-free coleslaw dressing.
- Chill keto slaw. If you have time, refrigerate the coleslaw for at least an hour or overnight to let the flavors develop. Stir before serving. I like to add a sprinkle of green onions, too.
How Many Carbs In Coleslaw?
Carbs in coleslaw can vary depending on the recipe used and how much sugar is added. It’s not unusual for coleslaw at the deli counter to have 13g net carbs and 12g sugar in just 1/2 a cup [*]!
Keto coleslaw has a lot less sugar and carbs. Each serving of this low carb paleo coleslaw recipe has just 2 grams net carbs (that’s total carbs minus fiber and erythritol, the sweetener used). And, that’s a serving size of 3/4 cup.
TIP: I used a bag of coleslaw mix to save time, plus I love a splash of color. But if you want to lower the carbs just a tad more, use plain shredded cabbage instead of am mix that has carrot pieces.
Can You Make Low Carb Coleslaw Ahead?
Yes, you can prep components of this keto slaw ahead of time. Shred the cabbage (if making it yourself) and mix together the keto friendly coleslaw dressing. Store in separate containers in the refrigerator. An hour or the night before serving, toss cabbage and homemade sugar free coleslaw dressing together and let chill in the refrigerator until serving.
Even if you’re in a pinch and realize you have no side dish for dinner, you can make it work. Just throw together this low carb coleslaw before preparing your main dish. Stick it in the fridge and it should be good enough by the time the rest of your dinner is ready.
How To Store Sugar-Free Coleslaw
Store this prepared low carb coleslaw recipe in the fridge for 3-5 days. If you store the cabbage and keto coleslaw salad dressing separately, the components will last much longer, up to a week or more.
What To Serve With Keto Slaw
This sugar-free coleslaw makes a great side to so many keto dinners. Try it with some of these meals for a complete meal:
- Keto Jalapeno Popper Chicken – The best flavors of jalapeno poppers stuffed into slices of chicken! It’s as good as it sounds.

This keto coleslaw is a light and fragrant version of the classic cabbage salad. Instead of mayonnaise, my slaw has a tasty yoghurt dressing with fresh dill. Serve it with meat, fish or even on a low carb sandwich.
Is store-bought coleslaw keto?
Coleslaw is one of those classic side salads that you can buy ready-made in most supermarkets. However, if you check the ingredients, you'll find that all contain sugar - it's added to the dressing.
In addition to this, they're often made with inflammatory oils such as rapeseed oil, which is extremely high in polyunsaturated fats.
As with most recipes - if you want to stay low carb, it's better to make your own!
Most keto coleslaw recipes you'll come across are made with mayonnaise. I do love a good slaw this way, as long as the mayonnaise is homemade. However, often I fancy something a bit lighter.
The version I'm posting here has a dressing of Greek yoghurt, lemon, olive oil and dill. I’ve already made it twice this week… it’s just that tasty.
I love it as a side with burgers, fish or on a keto sandwich. You could call it the little black dress of your weekday lunch box!
How to make a creamy keto coleslaw without mayo:
1.) Shred the cabbage using a mandoline slicer or food processor. Make thin carrot strips using a julienne peeler or grate using a food processor or box grater. Option to use a sharp knife if you don’t have either of these.
Then chop the parsley and finely slice the green parts of the spring onion/scallion.
Mix the veggies together in a large bowl.
(Note - The image means to show the way I sliced the vegetables. The entire amount of cabbage did not fit on the board.
2.) In a clean bowl, add the olive oil, yoghurt, lemon juice, fresh dill plus salt and pepper...
3.) ...and mix to make your yoghurt dressing!
4.) Add the dressing and the sesame seeds to the coleslaw and combine. Option to use clean hands to massage well.
Low Carb coleslaw dressing options
Want to take the dressing up a notch? Add a pinch of garlic powder or celery salt, especially if you like garlic!
If you don't have yoghurt, you can also use sour cream. Note that this will increase the amount of fat.
For a dairy free version, use plain coconut yoghurt.
And last but not least, you can always go for a classic mayonnaise. It's possible to make one with a hand whisk, but you'll get better results with a handheld electric mixer (steel whisk attachments). I haven't had good results with food processors or stick blenders.
How to make a quick mayonnaise:
1.) Put 1 egg yolk and ½ tsp mustard into a clean, dry glass or metal bowl and whisk.
2.) Measure ¾ cup or light olive/avocado/macadamia/walnut oil.
3.) Add 1 drop of oil to the egg yolk mix and whisk until combined. Add another drop, then another... until the mixture begins to thicken. VERY slowly pour in about ½ the oil, whisking constantly.
4.) Now add 1 tbsp lemon juice and 1 tsp of apple cider vinegar plus pepper and salt.
5.) Slowly add the remaining oil while whisking.

Which vegetables should be in a coleslaw
Coleslaw is all about a good dressing, be it mayo or my (sensational) yoghurt dressing. Therefore, I'd say that you can vary your veggies as you see fit, as long as you include either red or white cabbage or both.
A quick word about the carrots. Some people like to avoid them as they're relatively high in carbs.
I think the carrots taste great, plus they look lovely and colourful in the salad mix. If you left them out, you'd reduce your net carbs by 1 g to 3.6g per portion.
So. If you're after an ultra-low carb keto coleslaw, make one with only cabbage and mayo. If you're fine with eating ¼ of a medium carrot, try my version. I'm sure you'll love it!
Store in an airtight container in the fridge for up to 3 days.

It's so good that anyone who tries it won't be able to tell the difference between this, and the non-keto kind. In fact, I might even go as far as saying that this gives "regular" coleslaw a run-for-its-money!
But you don't have to take my word for it - try this recipe out for yourself, and you'll see what I mean.
INGREDIENTS FOR KETO COLESLAW
As I mentioned, this recipe is a step above basic coleslaw, so there's a little more that goes into the dressing than usual.
But don't worry, most of these are common kitchen ingredients – a lot of which you may already have on hand.
Having said that, here are all of the ingredients you'll need:
- 4 cups shredded coleslaw mix
- ¼ cup mayonnaise
- ¼ cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon Confectioners Swerve
- 1 teaspoon celery seed
- ½ teaspoon Dijon mustard
- ½ teaspoon garlic powder
- Sea salt (to taste)
- Black pepper (to taste)
Like I said, pretty common stuff! And, let me tell you, every ingredient comes together to create the perfect balance of flavors.
So, now that we've got our ingredients list let's go over some important points before starting.
WHAT'S IN COLESLAW MIX?
As you can see, this recipe calls for a few cups of shredded coleslaw mix.
And if you don't know what that is, it's basically pre-shredded red or green cabbage with some grated carrots mixed in.
Now, you can usually find pre-packaged coleslaw mix in the store. But if you'd rather make your own, all you have to do is combine shredded green cabbage, shredded red cabbage, and some sliced carrots to make a tri-color coleslaw mix.
Making a homemade coleslaw mix is simple as that!
CHOOSING YOUR KETO MAYONNAISE
Ok, so when choosing the mayonnaise for your keto coleslaw, remember that not all mayonnaise is made equal.
Some mayonnaise brands contain a ton of added sugar and therefore are definitely not keto-friendly.
For this recipe, you'll want to go with sugar-free mayonnaise, like the one from Cool Chef Foods. It literally has 0 carbs, making it perfect for this recipe.
That being said, you can use pretty much any low carb mayonnaise for this recipe – it'll come out tasting fantastic either way!
By the way, you'll also want to be careful when choosing your dijon mustard. Although it is less common than mayonnaise, some brands sneak in added sugars, so make sure you read the ingredients label and nutrition facts.
GIVING THIS COLESLAW A SWEET TOUCH
Now let's talk about how to make sugar free coleslaw - one that's got a slightly sweet & tangy taste, but no added sugar.
My go-to sweetener for this recipe is Confectioners Swerve. It's a keto-friendly sweetener that's just as sweet as sugar but with 0 carbs and 0 calories.
Another great keto sweetener option is Lakanto's Monk Fruit Sweetener. Just like Swerve, you can use it to replace sugar at a 1:1 ratio and it also has the same level of sweetness with 0 carbs.
However, you can always use a liquid sugar free sweetener to sweeten up this coleslaw recipe. As long as it's pure stevia, monk fruit, or sucralose, it'll have 0 carbs, and it'll be keto friendly.
HOW TO MAKE KETO COLESLAW
Now that we're caught up on the ingredients, we can get started on making this quick and easy low carb coleslaw recipe.
And when I say this recipe is easy, I mean it's literally just two steps - making the dressing and combining it with the coleslaw mix.
All in all, it should take you about 5 minutes to make your coleslaw – or 10 minutes if you're shredding your own vegetables.
With that being said, you'll still want to make this recipe at least an hour before you're planning to serve it, to let the vegetables really absorb the flavors from the dressing.
STEP 1: MAKING THE DRESSING
First, to make the dressing, whisk & combine all the dressing ingredients – except the coleslaw mix – in a large bowl.
And, I like my coleslaw to be super bright and tangy, so I use sour cream, Dijon mustard, and apple cider vinegar.
But if you want less of a tangy flavor, you can start with a small amount of vinegar and work your way up until you have your desired flavor.
STEP 2: PREPARING THE VEGETABLES
So, if you're using coleslaw mix, you can skip this step.
But if you're starting with whole cabbages and carrots, this is how to prepare them for the coleslaw.
First, start by removing the rough outer skin of your carrot with a hand peeler or a paring knife. That said, if you're using baby carrots, you won't have to remove any outer skin.
Then, cut off the carrot(s) ends and use a knife or the large teardrop-shaped end of a grater to make them into narrow slices.
To shred the cabbage, cut off the hard stem and slice the cabbage in half. Cut out any remaining pieces of the tough inner core.
Then, slice the cabbage leaves lengthwise to create long strips or width-wise if you want shorter pieces.
Combine your shredded carrots and cabbage in a bowl, and there you have it – homemade coleslaw mix!
STEP 3: MAKING THE COLESLAW
Now, once your dressing and vegetables are ready, place your coleslaw mix in a large bowl and drizzle the dressing on top.
Gently toss everything together until the dressing has coated all the cabbage and carrots evenly.
Then put it in the fridge for at least 1 hour before serving to give the flavors of the dressing a chance to absorb into the vegetables. Enjoy!
STORING YOUR KETO COLESLAW
Once you've served your keto coleslaw, you don't want to leave it at room temperature for more than 90 minutes. As with any coleslaw recipe, it can develop a strange taste if left out too long.
This recipe makes 4 servings, so if you have some leftover, the best way to retain the flavor and texture is to keep it in an airtight container and store it in the fridge for up to 4 days.
And the great thing about this recipe is that it comes together really quickly, so you can always make a fresh batch if you run out!
