Remember that the timing of adding the liquid is crucial when making risotto. Ensure that each ladle of broth or wine has been almost fully absorbed before adding the next to avoid ending up with mushy rice. Although many recipes suggest constantly stirring, this can make the rice gluey. After adding a spoonful of hot stock, stir occasionally to blend the liquid and prevent the rice from scorching.

If you come to the end of your stock and your risotto is still too firm, complete the cooking by adding hot water in small amounts, stirring frequently until the water is fully absorbed.

Transform this risotto recipe into a complete meal by adding cooked shrimp, sautéed mushrooms, or grilled chicken in the final stage. Change the flavor of the dish by swapping in Pecorino Romano, fontina, mozzarella, or gruyere cheese instead of Parmesan.
