As a child, I was raised in a household where fish was a regular main course. We ate fish every weeknight, always prepared from scratch. Both whole fish and fillets were on the menu at my parents' house. Their fish dishes were prepared in a variety of ways, from braising to pan frying.

When I was young, I naively believed that everyone had a favorite fish dish. Then, alas, I learned the hard way that it wasn't even close to being accurate. (I have a sneaking suspicion that some people haven't found the ideal fish dish yet, but that's just a theory.) ) 😉

There are a lot of great fish recipes out there (hello, Sheet Pan Lemon Salmon! ), but this one is great for beginners because it's so simple. In just 20 minutes, you can have incredibly tender, flavorful food. People keep telling me that they can't believe I prepared this mahi mahi dish at home and that it tastes just like it did at the restaurant. And so can you!

The definition of Mahi Mahi

Although it shares no resemblance to dolphins, the Hawaiians gave the dorado, Coryphaena hippurus, the name "Mahi Mahi." That's because, like dolphins, this fish sometimes swims in a streamlined pattern. The Mahi Mahi is a pelagic fish that can be found in the waters of the Caribbean, Pacific, and Indian Oceans. Mild in taste but with a firm, moist texture, mahi mahi is a popular fish for chefs to prepare in kitchens all over the world.

How do you recommend cooking mahi mahi?

This recipe is great whether you're an expert fish-cooker or just want to start eating more fish. Like with this tried-and-true lemon garlic swordfish, we employ the stovetop-to-oven method of cooking, which results in a nicely browned exterior and a tender, flaky center.

Here are a few of our favorite ways to prepare this delicious fish:

  • Whether you opt for fresh or frozen, make sure to get high-quality mahi mahi. Wild mahi mahi is preferred because it has more flavor.
  • Make sure each piece of mahi you serve weighs 6-7 ounces and is at least an inch thick. Overcooking and improper seasoning are both consequences of serving sizes that are too small or too thin.
  • Always make sure the fish has been patted dry of any excess moisture; this step is crucial in determining how well the fish will brown. All excess moisture is removed with a paper towel.
  • Before adding the fish to the pan, make sure the oil is piping hot. Fast and even browning of the exterior is achieved.
  • Never reheat fish after placing it in a pan. rearranging it Give it 3 minutes to brown. Having a substantial splatter guard is helpful. I use mine frequently when frying in a pan.
  • Make sure your oven is nice and hot before transferring the mahi mahi from the stovetop to the oven. If you put it in the oven for 5 minutes, it will be ready.

Recipe for Mahi-Mahi with Lemon-Basil Sauce

  • Lots of garlic, freshly minced, is required. Make sure you use plenty of garlic.
  • Take a single lemon, zest its peel, and extract its juice into a tablespoon. Don't waste your money on bottled lemon juice; fresh lemons are essential.
  • Salted pure butter is my preference, but real butter, salted or unsalted, will work here.
  • Chives, parsley, or both can be used as freshly chopped herbs.
  • One helpful hint is that the sauce can be made in advance, covered, and refrigerated until it is time to serve. In other words, this is a fantastic condiment to keep on hand.

  • 2 TB the use of salted butter , cooled to a comfortable room temperature
  • 1 TB finely minced parsley or chives
  • 2 TB the individual cloves of garlic , minced
  • â…› tsp table salt
  • ¼ tsp new black peppercorns
  • 1 TB the extract of a fresh lemon
  • 1 TB flaked lemon peel
  • 2 TB olive oil
  • 4 Mahi-mahi fillets, 4 ounces each, 1 inch thick
  • using only kosher salt and freshly ground black pepper
  • Make sure the rack is in the center of the oven and set the temperature to 400 degrees F.
  • Ingredients for the Lemon Garlic Mixture (can be made ahead of time) should be combined in a small saucepan and stirred to combine. Set aside
  • To prepare the fish fillets, first use paper towels to absorb any remaining moisture. Be sure to remove as much moisture as possible before moving on. Coat fillets with a mixture of kosher salt and freshly ground black pepper. Set aside
  • Olive oil should be heated over high heat in a large ovenproof pan. Add the fish fillets to the hot oil and leave them alone for 3 minutes, or until they are browned on one side. Carefully turn the fish fillets over, then place the pan into the preheated oven.
  • Cook fish for 5 minutes at 400 degrees Fahrenheit, or until it reaches an internal temperature of 145 degrees. Be careful not to overcook When the fish has one minute left in the oven, heat the prepared lemon-garlic mixture in a small pan over medium heat, stirring constantly, until melted and bubbly.
  • When fish is done cooking, remove from heat and pour mixture over it. Splash on some of the juices from the fish pan, too. Accent with additional lemon slices and serve.  
Make sure you use kosher salt, which is much coarser than regular table salt. It is common knowledge that fine salt is used in restaurants because it is much more salty than kosher salt. You can prepare the Lemon Garlic Sauce in advance and simply reheat it before serving. When pan frying, a large splatter guard is a useful accessory. It works wonders on stray drops of oil.
