Radishes can be consumed either raw or cooked, with heat being a helpful tool to subdue their delicate or sometimes pungent spiciness. To cook radishes, there are multiple methods to choose from, including baking or roasting them in an oven or sautéing or pan-roasting them on a stovetop. However, boiling or steaming radishes may result in excessively soft radishes and nutrient depletion. After experimenting with different techniques, we've discovered that roasting them in a hot oven is our preferred (and easiest) way to cook radishes.

Begin by preheating your oven to 425℉. In a bowl, create a mix of radishes, your preferred cooking fat (ghee, butter, or oil), dried herbs, salt, and pepper. Toss until the radishes are coated evenly with the mixture. Note: garlic should be added in step 3.

Spread the radishes out in a single layer in a large 9×13 inch baking dish. Bake for 20-25 minutes, tossing every 10 minutes. After the first 10 minutes of baking, add minced garlic to the mixture and toss. Return the dish to the oven and bake for an additional 10-15 minutes until the radishes are a beautiful golden brown and can be easily pierced with a fork.

Serve with your preferred dressing for dipping or drizzling, and garnish with fresh parsley, dill, or chives.
