Roasted Radishes with a Bold Garlic Kick
Spring has arrived with its vibrant colors, and fresh radishes are certainly among the most beautiful crops that have surfaced during this season. Often overlooked in culinary circles, radishes are a unique vegetable that deserve a second glance. Fortunately, we have a recipe that will make you fall in love with this crisp and peppery vegetable. Our Garlic Roasted Radishes recipe will soon become a go-to dish in your arsenal.

What can you do with radishes, you might ask? Sure, you can use them raw in salads, slice them thin to top your favorite dishes, or boil them and serve with butter, following the French tradition. But roasting radishes is a next-level technique that will transform this vegetable in ways you can’t even imagine. Roasting mellows out their spicy flavor, bringing forward its natural sweetness. Adding our garlic-infused butter (or ghee) will create a layered and savory taste that will leave you wanting more.
This roasted radish recipe is perfect if you enjoy roasted potatoes, as the end result is somewhat similar in texture but with far fewer carbs, making it a healthier alternative. The combination of flavors and textures is just divine. Even if you’re not the biggest radish fan around, we encourage you to give this recipe a try, because we know you’ll be pleasantly surprised.
To make this recipe, you only need a few simple ingredients that you may already have in your pantry. The most important item is, of course, fresh globe radishes, which are the most available type of radish. You can also choose to substitute butter with ghee, coconut oil, or avocado oil to make this dish vegan-friendly. Seasoning is also straightforward, with sea salt and ground black pepper being our top choices. Adding garlic cloves and dried parsley will create an aromatic liaison that will amp up the dish's flavor and make it even more savory.

Radish Cooking Techniques
Radishes can be consumed either raw or cooked, with heat being a helpful tool to subdue their delicate or sometimes pungent spiciness. To cook radishes, there are multiple methods to choose from, including baking or roasting them in an oven or sautéing or pan-roasting them on a stovetop. However, boiling or steaming radishes may result in excessively soft radishes and nutrient depletion. After experimenting with different techniques, we've discovered that roasting them in a hot oven is our preferred (and easiest) way to cook radishes.

The Benefits of Eating Radishes
Radishes are often underappreciated and overshadowed, so we're excited to share this delicious and unique way of enjoying them. Begin by preheating your oven to 425℉. In a bowl, create a mix of radishes, your preferred cooking fat (ghee, butter, or oil), dried herbs, salt, and pepper. Toss until the radishes are coated evenly with the mixture. Note: garlic should be added in step 3.
Spread the radishes out in a single layer in a large 9×13 inch baking dish. Bake for 20-25 minutes, tossing every 10 minutes. After the first 10 minutes of baking, add minced garlic to the mixture and toss. Return the dish to the oven and bake for an additional 10-15 minutes until the radishes are a beautiful golden brown and can be easily pierced with a fork.
Serve with your preferred dressing for dipping or drizzling, and garnish with fresh parsley, dill, or chives.
